Runner bean salad with tomatoes

Ingredients

  • 300g runner beans
  • Handfull of cherry tomatoes (preferably Datterini), halved
  • 1 garlic clove, chopped
  • Olive oil
  • Salt/pepper

Directions

  1. Blanch runner beans in salted boiling water, drain and cool down quickly
  2. Fry tomatoes on a splash of olive oil, skin side down, till slightly wilted and roasted
  3. Add chopped garlic and fry for further 30 sec
  4. Combine runner beans, tomatoes and a splash of olive oil, adjust seasoning and serve
